In Hyères, the brasserie Le Guillaume Tell — a family institution since 1933 — has regained its original character through a careful reinterpretation of its architectural heritage. The project unveils historic features — cast-iron pillars, 19th-century marble flooring, and generous ceiling heights — blending authenticity with contemporary elegance.

• Design a new spatial identity that balances heritage, modernity, and conviviality
• Create bespoke furniture and refined scenography in harmony with the history of the place

Results :
A reinvented brasserie where architectural heritage meets refined, contemporary design. Restored noble materials — cast iron, marble, and wood — are elevated by elegant lighting scenography and custom-made furniture, offering a warm, timeless atmosphere deeply rooted in Toulon’s history.
